The Schiava Trentino IGT 2024 Bio by Francesco Poli is an organic rosé wine that authentically interprets the winemaking tradition of Trentino-Alto Adige. Made from 100% Schiava grapes grown in the organic vineyards of Santa Massenza, it draws strength from the mountain terroir characterized by high altitudes, well-drained soils, and marked temperature variations, which lend it freshness and aromatic finesse. Manual harvesting ensures a careful selection of the grapes, which are vinified as a rosé with cold maceration on the skins, soft pressing, and temperature-controlled fermentation. Aged exclusively in stainless steel tanks preserves fragrance and vivacity, enhancing the direct and immediate character of the grape variety. It presents a lively and crystalline rosé color. On the nose, it offers a fresh and elegant bouquet, with wild strawberries, raspberries, and delicate floral notes, enriched by a hint of bitter almond that defines its complexity. On the palate, it's dry, fresh, and agile, with a smooth mouthfeel and an elegant, distinctive bitterish finish that prolongs the wine's lingering aftertaste and invites another sip. Perfect as a summer and convivial wine, it pairs well with light appetizers, salads, vegetarian dishes, and fish or white meat dishes.
