Saignée Brut Rosé Metodo Classico by Ca'Lojera is a sparkling rosé made from Merlot and Cabernet Sauvignon grapes grown on the moraine hills of Lake Garda. The grapes' brief press time, fermentation in stainless steel, and aging on the lees precede tirage and a second fermentation in the bottle, with at least 18 months on the lees. The result is a fine and persistent perlage, clear and very harmonious. The nose recalls currants, wild strawberries, and wild roses; on the palate, it is elegant, savory, and fragrant, with a fresh and well-defined finish. The name Saignée evokes a fiery and passionate character, also expressed by the peacock on the label. A versatile sparkling wine, perfect with raw fish, sushi, lake fish, and sophisticated aperitifs.
