708km Trento DOC 2021 Extra Brut Blanc de Blanc is born from the terraced vineyards of the Cembra Valley, where Chardonnay grows on porphyry soils at about 550 m altitude. Low yields prioritise aromatic precision and structure. Vinification includes gentle pressing, slow fermentation between 15–17°C, and bottle fermentation with at least 40 months on the lees. Bright straw yellow in the glass, with fine continuous perlage. The nose blends Golden apple with marked minerality recalling the volcanic origin of the area. The palate is fresh, taut, linear, with a persistent finish confirming its mountain-Chardonnay character. A rigorous Metodo Classico expressing the true identity of the Cembra Valley.

Cembrani DOC unites small producers of the Cembra Valley, a mountain region shaped by terraced vineyards and porphyritic soils. Here Chardonnay reaches a pure expression thanks to high altitude, strong temperature swings and vineyard-focused agriculture. The production philosophy enhances precision, freshness and territorial identity, with Metodo Classico aged long on the lees to highlight minerality and finesse. The result is clean, vertical wines true to the character of the valley.
