The Pas Dosè Metodo Classico from Cantina D’Araprì expresses the full personality of Bombino Bianco and Pinot Noir without the addition of liqueur d’expédition. The grapes, hand-picked in the San Biase, Cotinone, and San Matteo districts, are selected in the vineyard and transformed according to the Metodo Classico. Each bottle ages at least 30 months in the cellar before disgorging, developing complexity and great finesse. The color is an intense straw yellow with golden reflections and a fine, persistent perlage. The nose reveals hints of toasted bread and pastry, while the palate is dry, creamy, fresh, and harmonious, with a lingering mineral finish. Ideal as a refined aperitif, it pairs well with raw seafood, shellfish, sushi, fish, and fresh cheeses.
