Le Cave Mandoletta Piemonte DOC 2020 Brut Metodo Classico - Castello Di Uviglie
Le Cave Mandoletta – Piemonte Spumante DOC Brut Metodo Classico is made from Chardonnay and Pinot Noir grown on the calcareous-clay hills of Rosignano Monferrato. Vinified in white in steel and re-fermented with Metodo Classico, it ages at least 24 months in the historic Pietra da Cantoni caves, ideal for slow, steady maturation. Bright straw yellow in the glass with fine, persistent perlage. Aromas of white fruit, croissant, bread crust and citrus notes. The palate is immediate, light, engaging, with floral hints, banana, white tea and balanced freshness. The youngest Metodo Classico of the winery, perfect from aperitif to fish, thanks to its lively drinkability and harmonious finish.

The “Le Cave” line is born in the ancient underground caves of Castello di Uviglie, where the Pietra da Cantoni provides ideal conditions for slow, steady ageing. Here Chardonnay and Pinot Noir are processed with white vinification and Metodo Classico, following a philosophy that blends tradition, precision and respect for the territory. The wines express freshness, fragrance and immediacy, finely interpreting the Monferrato hills and their calcareous–clay soils.
