Rosé Dosaggio Zero 2020 – Erpacrife is a Metodo Classico made from Nebbiolo grapes created in Piedmont with an experimental approach yet rooted in tradition. The grapes come from ideal vineyards, where Nebbiolo expresses tension, finesse, and a structure suited to sparkling wine. Vinification follows the Metodo Classico method, with secondary fermentation in the bottle and no final dosage, a choice that favors precision and a direct interpretation of the grape variety. In the glass, it presents a delicate pink hue and a fine, persistent perlage. The aromatic profile recalls small red fruits, floral notes, and evolutionary hints linked to the aging on the lees. The palate is dry and upright, with a crisp freshness and a clean finish that enhances the Nebbiolo's character. It is a sparkling wine that combines structure and tension, designed to accompany aperitifs, fish dishes, and more structured preparations.
