Dolceacqua Superiore DOC 2024 - Maixei
The 2024 Dolceacqua Superiore is a Ligurian DOC red wine made from Rossese grapes grown in the most suitable areas of the Nervia and Verbone valleys, in the far western Liguria. The vines, trained using the traditional bush vine system, grow on predominantly sandy-clay soils rich in gravel. Manual harvesting and careful grape selection precede vinification in stainless steel at a controlled temperature, with maceration for 6-8 days and subsequent malolactic fermentation and aging in stainless steel. In the glass, it presents a ruby red color that tends towards garnet as it ages. On the nose, wild strawberries, roses, and dried violets emerge, accompanied over time by nuances of licorice and aromatic herbs. The palate is soft, savory, and velvety, slightly warm, with the characteristic and pleasant bitterish finish of Rossese.

Maixei is a Ligurian cooperative founded to promote olive growing in the Dolceacqua area and the Ligurian Riviera. Production focuses on extra virgin olive oil obtained from Taggiasca olives, a cultivar emblematic of Liguria and prized for its delicate and balanced flavor. Early harvesting and cold processing allow for the olives' natural characteristics to be preserved, resulting in an oil with a light fruitiness, low acidity, and a harmonious flavor. The attention to the raw material and the strong connection to the territory make Maixei oils an authentic expression of the Ligurian olive oil tradition, ideal both on its own or as an elegant accompaniment to everyday dishes.
