Ingredients for 4 people

  • 800 g of meat (veal, pork or beef)
  • 3 medium potatoes
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 300 ml of vegetable broth
  • 1 glass of red wine
  • 3 tablespoons tomato puree
  • 1 tablespoon flour
  • Extra virgin olive oil to taste
  • Rosemary, salt and pepper to taste

Preparation

  1. Chop the onion, carrot and celery for the sauté.
  2. Heat the oil in the Le Creuset Cocotte and sauté the vegetables over low heat.
  3. Add the meat and brown well to seal in the juices.
  4. Season with salt, pepper, rosemary and a tablespoon of flour. Mix.
  5. Blend with red wine and let the alcohol evaporate.
  6. Add tomato puree and broth until the ingredients are covered. Cook with the lid on for 1 hour.
  7. Add the diced potatoes and cook for another 40 minutes.

Service

2. Cocotte Bread: Crispy Outside, Soft Inside

Ingredients

  • 400 g of 00 flour
  • 8 g of salt
  • 1 g of dry brewer's yeast
  • 300 ml of cold water (12-18°C)

Total time: ~24 hours
Cooking: 1 hour

Preparation

  1. Mix flour, salt and yeast. Add water and knead briefly.
  2. Cover with cling film and leave to rise for 12-18 hours.
  3. Turn the dough out onto a floured surface and shape into a ball.
  4. Wrap in a floured cloth and let rise for another 2 hours.
  5. Preheat the oven to 250°C with the cocotte inside (lid included).
  6. Pour the mixture into the hot cocotte, cover and cook for 30 minutes. Then remove the lid and cook for another 20-30 minutes.

Service

Serve the bread on a cutting board, plain or with a drizzle of oil and rosemary. Perfect to accompany second courses or soups.

3. Fagiolata di Trinità: Homage to Bud Spencer

Ingredients

  • 400 g of pre-cooked beans (borlotti and red)
  • 1 red onion
  • 1 sweet red pepper
  • 100-150 g diced smoked bacon
  • Tomato puree
  • 1-2 sage leaves
  • 1 sprig of rosemary
  • EVO oil, salt, pepper and chilli to taste
  • 1 glass of Montepulciano d'Abruzzo

Preparation

  1. Brown the onion and pepper in the cocotte with oil.
  2. Blend with red wine, then add herbs and bacon.
  3. When the bacon is golden, add the beans, puree, water and salt.
  4. Cook covered for 5 minutes on high heat, then lower and continue for 30-40 minutes.

NB: You can add water to obtain a creamier version.

Service

Pour the beans into mini cocotte dishes and add crumbled taralli or toasted bread. A dive into the memories of the Far West!
