🍏 Basic Recipe: Apple Jam
Ingredients:
- Apples (washed, peeled, and sliced)
- Juice of 2 lemons
- 500 g sugar
- 100 cl water
Method:
- Combine all ingredients in a large pot.
- Cook over medium heat for about 45 minutes, stirring frequently.
- Sterilize the jars (see guide below).
- Pour the hot jam into preheated jars.
- Seal tightly and turn upside down for 15 minutes.
✅ Practical Guide to Preserving with Quattro Stagioni Jars
The 4 Golden Rules:
- Lids must be used only once to ensure a proper vacuum seal.
- Avoid sudden temperature changes (max 42°C) to prevent jar breakage.
- Do not pasteurize in the oven or microwave.
- The Ø 86 mm format is not suitable for fatty foods.
🥝 Choosing the Right Ingredients
Always use fresh, organic, and well-washed fruit and vegetables. To prevent browning and reduce bacteria, soak them briefly in lemon-acidulated water before use.
🧼 Sterilizing Bormioli Jars
- Check that the glass is free of chips or cracks.
- Place jars upright in a pot, separated by cloths.
- Cover with warm water and boil for 10 minutes.
- Wash the lids by hand in hot water only (no detergent, no dishwasher).
💡 Jars can be reused lids cannot!
🍯 How to Fill Quattro Stagioni Jars
- Fill up to 2 cm from the rim (1 cm for jars ≤20 cl).
- Do not press down solid ingredients; cover with liquid instead.
- Remove air bubbles with a spoon.
- Clean the rims and tighten the lids gently not too firmly.
🔥 How to Create a Vacuum Seal
Method 1: Pasteurization (Boiling)
- Place sealed jars in a pot filled with warm water.
- Wrap them in cloths to prevent contact and breakage.
- Bring to a boil and simmer for the recommended time.
- Allow jars to cool completely in the same water.
Method 2: Hot Filling
- Preheat the jars with hot water.
- Pour in the boiling mixture.
- Seal and invert for 15 minutes.
⚠️ Never place hot jars on cold surfaces (like marble or metal).
🧪 Checking and Storing
- Ensure the center of each lid is concave (vacuum achieved).
- If not, repeat pasteurization using a new lid.
- Store in a cool, dry, and dark place (max 23°C).
- Label each jar with the date and contents.
- Wait at least 60 days before consuming.
- After opening, refrigerate and consume within a few days.
