Jago Valpolicella Classico Superiore Ripasso DOC 2023 from Villa Spinosa is a wine designed for those seeking a territorial, easy-to-read, and concrete wine. It is made in Veneto, Italy, from a majority of Corvina Veronese and Corvinone with small percentages of Rondinella and other varietals, with a profile consistent with the grape variety and the winery's style. In the glass, it offers a deep ruby red wine with intense notes of spice and berries. The soil, originating from marine, calcareous deposits, is shallow and of medium fertility, supporting structure, freshness, and a precise flavor. Manual harvesting in crates with selection in the vineyard enhances a careful selection of the grapes. In the cellar, the red wine is made with destemming and soft pressing of the berries, followed by maceration and fermentation of the grapes for 12-14 days, with daily pumping over and delestages.
