Assirtyko 2024 from Volcania Winery is a wine designed for those seeking a territorial, easy-to-read, and concrete wine. Made in Greece from 100% Assirtyko, its profile is consistent with the grape variety and the winery's style. It offers excellent clarity in the glass, a lemon green color with intense reflections. It has a distinctive nose with subtle and delicate aromas of peach, apricot, and mango, with aromatic hints of jasmine and coffee beans. Harvesting is done manually in mid-September, highlighting a careful selection of the grapes. In the cellar, the free-flowing juice is separated in an antioxidant environment. Pressing and separation of the pure must are followed by temperature-controlled fermentation. Maturation on the fine lees takes place in antioxidant tanks under controlled conditions.
