The rows, facing east and south between 280 and 360 meters, are rooted in calcareous-sandy soils and are cultivated without herbicides or systemic treatments. Production is deliberately limited to concentrate the typical aromas of Moscato Bianco di Canelli. The harvest takes place in August, strictly by hand, with carbonic snow to preserve integrity and freshness. Vinification takes place in the absence of oxygen, and the slow, controlled fermentation at 15°C uses indigenous yeasts obtained from a pied de cuve from the same vineyard. In the glass, it appears straw yellow with a light perlage; on the nose, acacia honey, lime blossom, sage, and ripe fruit emerge.
